"There are decisions all along the way that have to be made," says Cheryl Siemens, an orchardist. "You have to know when and where to prune, where to plant pollinating trees, when to spray, when to pick."

But before you make these decisions, you have think into the future and try and determine what the market will be for your fruit.

"You really have to do what the public wants," says Siemens. "If they're telling you they don't want any more Jon-a-Golds, it's probably not a good idea to plant more of them."
