This is the real-life decision that orchardist Cheryl Siemens would make in a similar situation. Orchardists need to take risks in order to survive in what can be a harsh market.

"It might be safer to grow Jon-a-Golds because you've done it before," says Siemens. "But if it's not what people are asking for, then you're going to have a hard time selling them.

"We're already left with some Jon-a-Golds and so we'll be thinking about something else like a Spartan to give our buyers more choice," she says.

Of course, the market may change by the time the trees have matured, but it's just one more risk that orchardists have to be willing to take.
