This is the real-life decision that Richard Mattson would make. He is a horticultural therapist.

You began the project to help boost the students' confidence in themselves. As the project takes on a life of its own, you decide to encourage any ambitions they have to further their goals.

A similar situation occurred at a high school in Los Angeles. "The program started with growing fresh herbs and was so successful," says Mattson. "Then someone came up with the idea of making salad dressings from the herbs and selling those as well."

The project was a success, with the dressings now selling in several states. "The students learned entrepreneurship and how to run a small enterprise," says Mattson.

"They were encouraged, and are making thousands for the schools with this project," he says. The money goes towards student college and scholarship funds.
