You pour a taste for buyers, and they enjoy the wine. Over the next several weeks, you sell many bottles of the wine, and are complimented on its good taste.

Fortunately, you have left a few bottles to mature. Following the schedule, you open the bottles at a later date. The wine from these bottles is heavenly! It is prize-winning wine, much better and more mature than the same wine you uncorked months ago.

Too bad you sold most of the wine before it was mature. "Wine needs time to age and mature," says winemaker Elias Phiniotis.

"You have to make decisions every day that will affect the flavor of the wine. You have to be a good planner, and be able to wait."
