You decide to throw away the beer you've siphoned.

You put the rest into the new bottles. This is the decision brewmaster Mike Kelly recommends. He says cleanliness and attention to detail are essential in a brewery.

"Whether you're homebrewing or you're in charge of Anheuser-Busch, it's [all about] attention to detail -- that's the difference, because it doesn't take much," says Kelly. "Beer is a fairly hardy product... but at the same time it doesn't take much to spoil it."

The solution of siphoning out the beer may have worked physically, but cleanliness is incredibly important when brewing beer. The siphon isn't sterile, so it could introduce bacteria to the brew. Also, using your mouth to start the siphon isn't a good idea because it's one more way to introduce bacteria into the beer. Any contamination will also affect the flavor of the beer.

The best idea in this situation is to use the bottles, and wait until you have patched your equipment to use the keg.
