You decide to keep siphoning.

It seems to be working. You head upstairs to help your assistant unload the bottles and start to do other work. Four hours later, you remember the keg. You and your assistant rush downstairs to find that the hose has come out of the keg, and beer is rushing across the floor.

"You're using that hose?" asks your assistant. "That's the hose I've been using to mix toxic chemicals!"

You feel sheepish. You know better than to use unsanitary or questionable equipment. Even though you are standing in a pool of wasted beer, you feel lucky that no one actually drank this spoiled batch.

"Attention to detail is very important, [and] being able to train new staff and keep existing staff up to speed on sanitation and cleaning and things like that," says brewmaster Mike Kelly.
