  • Bake: to cook in dry heat
  • Boil: to cook covered in liquid that has large, rolling bubbles
  • Chop: to cut ingredients into pieces using a knife or blade
  • Caramelize: to heat sugar until it turns brown and begins to melt
  • Fry: to cook in oil or grease
  • Fold: to introduce one substance into another using a gentle turning motion with a spatula or spoon. Bring the spatula up from the bottom of the bowl and gently turn it over when reaching the top of the substance. Repeat until all ingredients are folded
  • Meringue: sweetened egg whites that have been beaten until stiff. May be flavored or browned in the oven
  • Mix: to combine ingredients using a circular motion with a spoon or spatula
  • Poach: to cook slowly in a liquid
  • Simmer: to cook slowly covered with liquid that is just below boiling
  • Stir-fry: to cook quickly with high temperatures and low quantities of oil or fat
  • Stock: liquid used as the basis of soups and stews
