By this time, you have been informed of our decision to close the doors of your diner until you can adhere to public health codes. My three visits consisted of three verbal warnings, three written warnings -- all of which you signed -- and two fines.

You not only signed each report, but you also promised that thermometers would be purchased immediately, and the temperature of your soup would be increased to code. I believe I gave you ample opportunity and time to do this, yet it was still not done.

As a restaurant owner, you should know that cold foods should be stored at a temperature of 40 F or lower, and hot foods should be kept at 140 F or higher. It is for these reasons that we have decided to close down your establishment.
