You have given them plenty of chances, but the time has come to play hardball. Sometimes people don't learn until something bad happens.

Customer health is at stake. They are committing an offense, and by ignoring it, they are breaking the law. You are well within your rights to shut them down.

"Taking an enforcement action against people that just aren't in compliance -- that's one of the challenging things," says health inspector Gordon Stewart. "You don't want to close anybody down but if you see gross infractions of the [rules] and you've got major health risks... you've got to make the call and close somebody down that's trying to run a business."
